Here is the recipe. At the Roundup I used a couple bottles of lime juice and skipped the shrimp.
Seviche --*disclaimer-this recipe may not kill tapeworms but it's delicious*
Ingredients:
* 4 stalks of celery (chopped)
* 1/3 of a large Red Onion (finely chopped)
* handful of cilantro (finely chopped)
* 2-3 jalapenos (more or less depending on preferred spice level-chopped also sense a theme
* 1 lb of shrimp
* 1/2 lb of redhorse filet(or other fish)
* 1 tablespoon Olive oil
* Salt and pepper to taste
* 4-5 limes
* 1-2 lemons
* Splash of tequila (optional)
Directions:
Chop Celery, Cilantro, Onion and jalapeno. Mix together in large mixing
bowl. Cooked shrimp in olive oil (and splash of tequila) and flavor
with salt and pepper. I buy large uncooked shrimp and cut them into
halves or pieces after they are cooked so they are more bite sized.
Marinate fish in lime/lemon juice for 1 1/2-2 hours. I like to slice
the fish or pull it apart into small thin pieces. It will be easier to
eat and will marinate faster. After fish is done marinating, mix
everything together including the marinade (lemon/lime) juice the fish
was in. I usually seal and refrigerate overnight, but you don't have to
if the fish is done. Keeps for 2-3 days.
All of this is approximate. You can all go light on an ingredient if
you are not sure and add more later if necessary, that is what I would
recommend. I always go a little wild with the cilantro and jalapeno,
but I don't know if everyone loves that.
